Avocado Toast with Poached Egg

A trendy, nutritious breakfast with creamy avocado and a perfectly poached egg on toast.

  • 1 slice whole-grain bread, toasted
  • 1/2 ripe avocado, mashed
  • 1 large egg
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • Red pepper flakes (optional)
  • Fresh herbs for garnish
  1. Mash the avocado with lemon juice, salt, and pepper. Spread it over the toasted bread.
  2. Poach the egg in simmering water for 3-4 minutes until the whites are set and yolk is runny.
  3. Place the poached egg on top of the avocado toast. Season with more salt, pepper, and red pepper flakes if desired.
  4. Garnish with fresh herbs and serve immediately.
