- Preheat the oven to 375°F (190°C).
- Carefully separate the egg whites from the yolks, placing the whites in a large mixing bowl and the yolks in separate small bowls.
- Whip the egg whites with a hand mixer or whisk until stiff peaks form.
- Gently fold in the grated cheese, if using, along with salt and pepper.
- Spoon the whipped egg whites onto a baking sheet lined with parchment paper, creating two mounds.
