Cowboy Potatoes

A rustic and hearty side dish featuring sliced potatoes, cheese, onions, and seasonings, baked to perfection for a satisfying accompaniment to any meal.

  • Mixing Bowl
  • 4 large russet potatoes, sliced
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley for garnish
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the sliced potatoes, olive oil, garlic powder, paprika, salt, and pepper. Toss to coat evenly.
  3. Spread the coated potatoes in a single layer on a baking sheet.
  4. Bake for 30 minutes, flipping the potatoes halfway through.
  5. Sprinkle the chopped onion and shredded cheddar cheese over the potatoes. Return to the oven and bake for another 15 minutes or until the cheese is melted and bubbly.
  6. Remove from the oven and garnish with fresh parsley before serving.

Add crumbled bacon on top for an extra savory touch.

For a spicier version, include a pinch of cayenne pepper or jalapenos.
