Marry Me Chicken Soup

A creamy and flavorful soup featuring tender chicken, sun-dried tomatoes, and aromatic herbs. This comforting dish is rumored to be so delicious it could inspire a marriage proposal!

  • Large pot
  • Wooden spoon
  • Knife and cutting board
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts (cubed)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 3 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon thyme
  • 2 cups fresh spinach
  • 1/2 pound pasta (optional, for a heartier dish)
  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken with salt, black pepper, and red pepper flakes. Sauté until browned.
  3. Add minced garlic and cook until fragrant.
  4. Pour in chicken broth, then stir in sun-dried tomatoes, oregano, basil, and thyme. Simmer for 15 minutes.
  5. Reduce heat to low, stir in heavy cream and Parmesan cheese, and let it cook for 5 minutes.
  6. Add fresh spinach and cook for 2 minutes until wilted.
  7. If using pasta, add cooked pasta before serving.
  8. Serve hot and enjoy!

For extra flavor, use fresh herbs instead of dried ones.

If you prefer a thicker soup, add a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water).

You can substitute spinach with kale for a different texture.

For a dairy-free version, replace heavy cream with coconut milk.
