Marry Me Chicken Soup

- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts (cubed)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes
- 3 cloves garlic (minced)
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup sun-dried tomatoes (chopped)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon thyme
- 2 cups fresh spinach
- 1/2 pound pasta (optional, for a heartier dish)
- Heat olive oil in a large pot over medium heat.
- Season chicken with salt, black pepper, and red pepper flakes. Sauté until browned.
- Add minced garlic and cook until fragrant.
- Pour in chicken broth, then stir in sun-dried tomatoes, oregano, basil, and thyme. Simmer for 15 minutes.
- Reduce heat to low, stir in heavy cream and Parmesan cheese, and let it cook for 5 minutes.
- Add fresh spinach and cook for 2 minutes until wilted.
- If using pasta, add cooked pasta before serving.

For extra flavor, use fresh herbs instead of dried ones.
